5 healthy, tasty ways with chicken

We all love a list, so here’s one for you:

5 healthy, tasty ways to prepare chicken.

Some are quick, some take a bit more time, but they’re pretty fool proof and go well with  just about any side dish.

Pesto chicken: Cut chicken breasts into small pieces. Heat a non-stick pan on the stove, add some lemon juice, and then add the chicken pieces. Cook until cooked through, lower the heat and add a dollop or two of basil or sundried tomato pesto

Pulled chicken with baby marrow: Boil a whole chicken until cooked through. Leave to cool, and then remove the skin. Debone the chicken, pulling the meat into thin strips. Place in a baking dish, add one cup of hot water, juice from one lemon, Cajun spice, fresh chilli and grated baby marrow. Pop in the oven for 15 minutes and voila!

Curried yoghurt chicken: marinade chicken breasts in a mixture of plain yoghurt, chutney, turmeric, cumin, coriander, lemon juice and curry powder for an hour. Cook over a low heat, stirring occasionally, until done.

Chicken with leeks: Cook chicken strips in a little bit of oil until golden brown, lower the heat and add about 1 cup of milk, 1 tbsp cream and a large handful of chopped leeks. Simmer until the leeks are soft

Chicken braai: yes, it takes longer than braaing a chop, but it’s a great and hassle-free way to cook chicken. Marinade chicken thighs in a mixture of fresh coriander, grated ginger, lemon juice and a teeny tiny little bit of honey. Chuck the pieces straight onto the braai, or use chicken breasts and make your own sosaties. This recipe works equally well if you want to cook it in the oven, but with summer on our doorstep, the braai option is just so much more fun!
